Definitely NOT saturated fats ! Wow, it's amazing how people have been indoctrinated by the profit mongers and medical people that have bought into the hype created by the pharmaceutical companies that are raping America with promoting ignorance. NO FAT made in nature contains only one fatty acid. All three fatty acids are found together in foods and that includes, Saturated fats, Monounsaturated fats, and Polyunsaturated fats. These are all joined together with one gylcerol molecule. It is the percentage of fatty acids in a food that is important. For anyone to say Saturated Fats cause heart disease, is NOT correct. Saturated fats are what your heart uses as fuel. Saturated fats are very stable fats, unlike the polyunsaturated fats that are very unstable and become rancid (oxidize) very rapidly. In fact, vegetable oils, like soybean oil is very unstable and forms trans fats very rapidly when heated. Coconut oil is a highly saturated fat. It has a high smoke point and does not break down in heat nearly as fast as things like soybean oil, canola, cottonseed, and corn oils. Coconut oil is about 50% Lauric Acid that is anti-bacterial infection fighter and supports good thyroid functions; it also contains 8% Caprylic Acid and 7% Capric Acid, both that are anti-fungal agents. We have Ancel keys, the ego maniac, to blame for the Saturated Fat myth as a result of his "Lipid Hypothesis." Simply bad science. Saturated fats are used in the body for structure and the polyunsaturated fats are used in places where the body needs fast action, like in the brain and eyes. Getting the polyunsaturated fats from bottled oils is very bad. The very best way to get these good oils is from soaking seeds and nuts overnight and then fermenting them for a few hours. Making smoothies out of them is an excellent way to maximize the nutrients and the good fatty acids the body can truly use. What type of fats cause heart disease: CANOLA, SOYBEAN OIL, COTTONSEED OIL, CORN OILS. Trans fats are created by heating oils. Margarines, ALL OF THEM, contain very bad oils. Avoid all dairy that is PASTEURIZED and / or HOMOGENIZED, especially from cows that have been fed GRAINS. These are sick cows and their milk is sick. Homogenization crushes the butter fat cells and makes them into things your body cannot recognize and the body rejects them as toxins. Good saturated fats, like coconut oil and butter (from cows that have been fed grass and free range) are very good for you. You should be eating fats as follows: 60% monounsaturated fats (like those in Olive Oil), 30% saturated (like those in coconut & butter), 10% polyunsaturated fats from seeds and nuts (cultured is best and soaked over night to remove the anti-nutrients found in them). Cholesterol is a form of alcohol, not a fat. It is immiscible in water and fat is not. Blood is made of water and that is why the body uses cholesterol to transport FATTY ACIDS through the blood vessels. People who eat low fat, non fat foods are creating a BAD variety of saturated fat by making their liver a saturated fat factory. It's really time Americans begin to learn what is good and bad from people who know, not from the marketing geniuses that are promoting bad science and the medical people that have no clue what they are talking about regarding nutrition. LDL cholesterol is what takes the fatty acids to sites in the body. It is only pattern 2 LDL that can contribute to plaque build up in the arteries because it is very tiny particles that the HDL cholesterol cannot pick up and take back to the liver for reconjugation. Pattern 1 LDL is the GOOD GUY, NOT BAD. HDL has no problem picking it up and returning it to the liver. Homocystein protein is what makes blood sticky and the arterial walls sticky and bumpy, not cholesterol ! Eating GRAINS, SUGAR, and CORNSTARCH are what cause the bad pattern 2 LDL to be made. Eliminate those from your diet, and your LDL ratio will be very good. You need about 160 LDL of the Pattern 1 cholesterol to be healthy and a reading of about 50 for the HDL. For a man, between 200 and 240 total cholesterol is what is found in people that live long lives and for women, 240 to about 280 total cholesterol is very healthy and found in people living long lives. Drug companies are trying to sell you statin drugs that damage the body in many ways. For one, it causes you to stop making CoQ-Quninol in your liver that is what the heart needs for good health and the statins turn on the gene that causes muscle atrophy. Is it no wonder about 60% of the people taking statins complain about muscle aches? The heart is a muscle, right? All WRONG answers above, except onlymatch's answer which is very true. Soybean and corn oil have been shown in tightly controlled randomized clinical dietary intervention studies. The " heart healthy" polyunsaturated vegetable oils are the bad ones, so are hydrogenated fats (man made trans fats, not the natural ones) Saturated fat is GOOD for us and MOST stable.
